For two servings:
– 300 grams of diced pumpkin
– 2 carrots
– 1 apple
– 1 potato
– 1/2 onion
– 1 clove of garlic or 1/2 shallot
– Vegetable broth
– Salt and pepper q.b.
Put the diced vegetables and the washers of carrots in a pan with a little oil, onion and shallot (or garlic) and fry a little. When the onions and the pieces of apple are golden, transferred the vegetables in a pot with hot broth and cook everything for about 30 minutes, or until the vegetables break up into a puree. Then, spend all in the mixer and add spices to taste and a drizzle of raw olive oil.
Your pumpkin soup is ready, just mind that probably it is still very hot. 😉
